White sugar, also known as table sugar, granulated sugar, or regular sugar, is a commonly used type of sugar made from either beet or sugarcane that has undergone a refining process.
During refining, the molasses is completely removed, leaving only pure sucrose in the white sugar. Its purity level exceeds 99.7%, and its chemical formula is C12H22O11.
While chemically identical, white sugar from sugarcane and sugar beets can be distinguished through carbon-13 testing.
Some sugarcane refiners use bone char in the refining process for white sugar as well as some brown sugars. For this reason, white cane sugar may not be considered vegan.
The extensive refining removes all traces of molasses, resulting in a pure sweetener that has a clean taste and crystal white appearance. This makes white sugar versatile for many cooking and baking applications where minimal flavor influence is desired.
Unlike some cane sugar, beet sugar is always vegan as it is never refined using bone char.
When compared to brown sugar, white sugar does have lower levels of some minerals like calcium, potassium, iron and magnesium since the molasses is removed during refining.
